Guide: So, here is Mak’s noodle shops. One of the noodle shops with won-ton noodles

Male: Won-ton noodles. Shall we go inside?

Guide: That’s a good idea.

There are a lot of people here. So, as you now, the gentleman is working on the won-ton by hand.

Male: So this is shrimp?

Guide: Yes. This is the shrimp with mixtures—mainly, I don’t know what the ingredients. It’s a secret.

Male: So, he’s putting about a half of a shrimp in each one of those.

Guide: Yes.

Male: That is really fast that he’s making those.

Guide: Because everyday, you know how many thousands of won-ton they’re selling. What they’re selling everyday is around more or less 3000 bowls of won-ton soup noodles. Each bowl of won-ton soup noodles, they have four or five pieces. So, that means that maybe more than 15,000.

Male: 15,000 won-tons a day.

Guide: So, he’s already a fast machine.

Male: That’s incredible.

Guide: No bother.

Male: So as well as the won-tons in the won-ton noodle soup, there are noodles in the soup. Can we take a look at the noodles?

Guide: Yes. There’s nobody here. Maybe we can take a look.

Male: So, he’s just arranging the noodles what came out with each.

Guide: Yes. Because when they do the noodles—so these are the quantity size. So after that, when they arrive there, they would do it by hand. You can see that. The noodle is the right size for each bowl.

Male: Okay.

Guide: So they do it very fast. And then when it’s done, they will put it to the small kitchen to get it ready. When they get an order, they put a little amount of the noodles in boiling water and coat it.

Male: So from here, they go in the kitchen and they boil it in a broth. Let’s go take a look.

Guide: So you can see it now, the noodles are in a very hot water boiling the won-ton. And then when we order the won-ton soup noodles, the gentleman will very fast cook the noodles and the won-ton soup is already done. Because when somebody comes in to order, so they have to ready some that’s already cooked.

So for example, if I come here and in a rush, maybe I’ll just have a 5-minute time to have my lunch, then these are already ready.

Male: So that’s just boiling water. And then that’s a—what kind of stock is that?

Guide: This is like a shrimp soup.

Male: Shrimp soup?

Guide: Yes. When they cook it, they have to put it into some colder water to make the noodle cool down and more tender. And after that, they’ll cook it again really fast. And then when you put it into the bowl with the noodles, they would also the shrimp soup.

We just ordered, in less than 1 minute, that’s there.

Male: One minute and that’s right here.

Guide: So you see that here, they bring it along with a tea and this is the won-ton soup. This is a won-ton soup noodles.

Male: So this is…

Guide: But if you’d like to try, try to use also a little bit of vinegar sauce.

Male: Okay. So I’ll put a little bit of vinegar.

Guide: You can put just all or just one…

Male: One at a time. Okay.

Guide: And then you can try putting in maybe two dashes of vinegar sauce which would change the taste. So they put in a little bit, and then you put it in your mouth and chew it, and you would taste it differently. It’s not like as before.

Male: I like the vinegar.

Guide: Yes. The better it tastes.

Male: That’s great. I’ll just chow down.
