A dressed and split chicken for roasting or broiling on a spit.

To prepare (a dressed chicken) for grilling by splitting open.

Spatchcocking a bird is, in it’s most base form, is just cutting out the backbone and ‘flattening the chicken for more even grilling. However a properly spatchcocked bird is a work of art.
