Kaffir lime
A variety of lime with a knobby outer skin. The fragrant leaves are crushed or shredded and used in cooking, and the limes are used for their juice, mainly in Thai cuisine.
Karo
A fairly thin, light or dark corn syrup.
Kebob or Kabob
Small cubes of meat and/or vegetables roasted on a skewer.
Kidney Bean
A medium-sized, kidney-shaped bean with a dark red skin, cream-coloured firm flesh and a bland flavour; available fresh, dried and canned; also know as red kidney bean.
Kielbasa
A general term used for most Polish sausages. 2. A Polish sausage made from pork (with beer sometimes added) flavoured with garlic; smoked, usually pre-cooked and sold in medium to large links; also known as Polish sausage.
Kippered
Lightly salted and smoked fish.
Kirsch
A cherry-flavoured liqueur made of black cherries and their pits.
Kirschwasser
A liqueur made from cherries and commonly used to flame certain dishes.
Kiwi Fruit
A small barrel-shaped fruit (Actinidia sinensis) native to China; has a greenish-brown skin covered with fuzz, brilliant green flesh that becomes more yellow toward the centre, many small, edible black seeds and a sweet-tart flavour; named for the flightless bird of New Zealand where it is widely grown; also known as the Chinese gooseberry.
Knead
To work dough with the heels of your hands in a pressing and folding motion until it becomes smooth and elastic.
Kofta
A meat ball popular in the Balkans, the Middle and Far East.
Korma
Also, quoorma. A spicy Pakistani/Indian stew made of mutton and yogurt and flavoured with the spices that go into a curry
Kosher
Meat that is butchered and processed according to the Hebrew religious laws. Any food processed according to the Hebrew religious laws.
Kuchen
German cakes made with sweet yeast dough.
Kulich
Traditional Russian Easter cake. It is made of sweet bread dough and candied fruit, baked tall and round like the headgear of a Russian Orthodox priest.
Kummel
Liqueur flavoured with caraway seed.
Kumquat
A small citrus fruit resembling a small orange, about the size and shape of an olive.
