Located in Toronto's historic Kensington Market is Sanagan's Meat Locker... Yes in the same spot that had been Max & Son's butcher shop for the last 54 years.
This is a real butcher shop, where you deal with the guys who know and cut the meat.
What follows is an occasional series about meat cuts, and what to do with them. Not always a full recipe, just a kernel of advice from the guys behind the counter.
