Spicy Chicken Wings

Ingredients:
- 1 tbl plus 1 tsp hot paprika
• 1 tbl ground cumin
• 1 tbl ground coriander
• 1 tbl ground caraway
• 1 tsp cayenne
• 1 tbl freshly ground black pepper
• 1 tbl sea salt
• 1/4 cup plus 2 tbl olive oil
• 2 garlic cloves, peeled
• 4 pounds chicken wings

Method:
- Puree the paprika, cumin, coriander, caraway, cayenne, black pepper, salt, olive oil and garlic in a blender of food processor until smooth to make a marinade.
• Put the wings in a shallow nonreactive dish. Pour the marinade over the wings and toss to coat evenly. - Cover and marinate the wings in the refrigerator overnight or for up to 24 hours.
• Prepare a charcoal grill, preheat a gas grill to medium high, or preheat the oven to 375ºF.
• Grill wings for 15 minutes, turn them over, cover the grill and cook for another 15 minutes. Repeat this process cooking the wings uncovered for 15 minutes, then covered for 15 minutes and turing them as before. - After 1 hour of cooking time, the wings should be cooked through and crispy.
• To bake the wings, lay the wings next to each other but not touching on a nonstick or foil-lined baking sheet and bake until crisp, about 45 minutes.
• Serve the hot wings with tzatziki sauce for dipping.
