Grilled Chardonnay Shrimp

Don't over marinate the shrimp, a half hour is more than enough.
Wine for this segment was provided by: Wild Horse Canyon.
Ingredients:
- 3/4 cup Chardonnay
- 6 tablespoons fresh lemon juice
- 3 tablespoons honey
- 2 tablespoons extra virgin olive oil
- 1 tablespoon ground coriander
- 1/2 teaspoon salt
- Fresh ground pepper to taste
- 1 to 2 cloves garlic, minced
- 1 1/4 lbs. large peeled and deveined shrimp
- Bunch of fresh greens.
- 1/2 cup coarsely chopped macadamia nuts
- 1/2 cup diced red bell pepper (optional)
Method:
- Whisk together wine, lemon juice, honey, olive oil, coriander, salt, pepper and garlic in a bowl.
- Set aside 1/4 cup marinade (to be used later as drizzle) and add shrimp to remaining bowl of marinade.
- Cover and refrigerate for 15 minutes to a half hour.
- Remove shrimp from marinade and thread shrimp onto skewers. Discard marinade.
- Grill over medium heat turning, until completely pink.
- Place skewers on greens and drizzle with reserved marinade; sprinkle with nuts and bell pepper.
- Makes 4 servings.
