Grilled Chardonnay Shrimp

Grilled chardonnay shrimp recipe video
Shrimp on the 'Q. Looking for a great starter, or something for your guests to nibble on before the main event? These shrimp will fill that need,and keep people coming back for more.
Don't over marinate the shrimp, a half hour is more than enough.

Ingredients:

  • 3/4 cup Chardonnay
  • 6 tablespoons fresh lemon juice
  • 3 tablespoons honey
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon ground coriander
  • 1/2 teaspoon salt
  • Fresh ground pepper to taste
  • 1 to 2 cloves garlic, minced
  • 1 1/4 lbs. large peeled and deveined shrimp
  • Bunch of fresh greens.
  • 1/2 cup coarsely chopped macadamia nuts
  • 1/2 cup diced red bell pepper (optional)

Method:

  • Whisk together wine, lemon juice, honey, olive oil, coriander, salt, pepper and garlic in a bowl.
  • Set aside 1/4 cup marinade (to be used later as drizzle) and add shrimp to remaining bowl of marinade.
  • Cover and refrigerate for 15 minutes to a half hour.
  • Remove shrimp from marinade and thread shrimp onto skewers. Discard marinade.
  • Grill over medium heat turning, until completely pink.
  • Place skewers on greens and drizzle with reserved marinade; sprinkle with nuts and bell pepper.
  • Makes 4 servings.
