Blue Mac 'n Cheese Recipe

Ingredients:
2 cups elbow pasta
1 tblsp olive oil
2 cups button mushrooms (or any type of mushroom you like)
3/4 cup cream
4 oz Blue Cheese
Salt and Pepper
Method:
-Cook pasta in a large pot of salted boiling water and olive oil. Cook until tender (8-10 minutes)
-Drain and rinse pasta, then return to pot.
-Melt butter in a fry pan, saute mushrooms until golden brown.
-Pre-heat broiler.
-Add cream and 2/3 of the blue cheese to the pasta, using low heat bring up to temp just to melt cheese.
-Season to taste.
-Transfer to a heat proof baking dish, cover top with mushrooms and remaining cheese.
-Place under broiler, just to melt cheese and give some colour.

So today I’m making a kind of a twist on a Macaroni and Cheese recipe, it’s Macaroni with blue cheese. I just finished sautéing my mushrooms, made my pasta a little bit early, as I’m going to add some cream and about two thirds of the blue cheese that I’ve got. Ready to go, it’s a bit sticky, oh well, turn the heat on; and I just need to heat it up, melt the cheese. So there we go, our cheese is melted, and just turn that off; there we go. Alright, let get to put our mushrooms on top; spread this a little bit on it; I’ll just add a little bit more pepper. Who, I’m not good on sprinkling, am I?
