Just Chardonnay Tomato Basil Salad Recipe

Serves 4
Ingredients:
4 vine ripened tomatoes
2 shallots sliced thinly
8 large fresh basil leaves
1 cup of EVOO
¼ cup of Just Chardonnay
¼ cup of balsamic vinegar
Salt and pepper to taste
2 cups Freshly grated Parmigiana
4 cups of spring mix
Balsamic glaze
You will need:
6 inch Teflon frying pan
Strainer
Tea cups
4 plates or bowls

Method:
Take your frying pan and put it on med/high heat
Take your strainer and your grated Parmigianna cheese and sift it over the hot pan until the bottom is fully covered
Keep on heat until the cheese melts fully
Take off heat and let it cool slightly (one minute)
Peel the cheese out of the pan onto an upside down tea cup (to form the basket)
Leave it until it hardens (4 minutes)
Cut tomatoes in quarters and chop basil
Put into a bowl with shallots, salt, pepper, oil, wine and vinegar
Mix and season to taste
Place 1 cup of spring mix in each bowl or plate, put the parm bowl in the centre and fill with salad
Garnish with balsamic glaze.
