Toasted nuts, or seeds, or spices are often called for in recipes, and there are different methods: Stovetop, or Oven. I prefer using a cast iron pan on the stovetop, a bit faster and you have a more control because what you are toasting is right there in front of you. The oven is 'out of sight, out of mind' for me.

I use high heat, and pre-heat a cast iron frypan. Then add the nuts / seeds / spice, shaking or stirring the pan to make sure that they come in contact with the heat evenly.

Remember to keep your eye on them, and let your nose tell you when they are done... because they will be over-done in an instant.

Every nut / seed / spice will take a different amount of time, so you really need to use your judgement.
