Beef And Mustard Sausage Recipe

Ingredients:
4 feet medium hog casing
2 lbs boneless chuck with 25% fat
4 cloves of garlic minced
2 tsp whole yellow mustard seeds
1 tsp dried rosemary
2 tsp coarse salt
1 tsp fresh ground pepper
1 tsp sugar
1/2 tsp crushed red pepper
1 tbsp prepared Dijon Mustard
Method:
-Prepare the sausage casing.
-Cut meat into 1 inch cubes and keep really cold (put in freezer if possible for 1/2 hour before grinding).
-Mix garlic, mustard seed, & rosemary with cubed meat, and then grind with coarse disk on your grinder.
-Combine salt, pepper, sugar, dijon mustard, and red pepper with ground meat mixture - and mix well.
-Stuff into casings, and twist off into links or leave as coils. Prick air pockets, and refrigerate at least overnight before cooking.
-Grill or fry until internal temp of 160ºF is reached
-Can be stored in fridge for 2-3 days, or frozen for up to 3 months.
