Basic Vanilla Ice Cream Recipe

This basic Vanilla Ice Cream recipe has only 5 ingredients, requires no cooking, and with the right equipment is ready in 30 minutes.

Who doesn’t love Ice Cream - especially ice cream this easy, using the Donvier chiller. This stuff is a million times better than store bought.


Ingredients:
2 eggs
2/3 cup sugar
1 3/4 cups milk
2 cups cream
2 tsp. vanilla



Beat eggs and sugar with an electric mixer until thick and cream-coloured. Add milk, cream and vanilla, mixing well. Pour into Donvier and turn handle 3 times every 2-3 minutes for 20 minutes.
(Makes a quart or 1 litre)


Store the Donvier™ cylinder in the freezer to whip up/produce/stir up/frozen treats at a moment's notice.

Hi everyone! Welcome to Le Gourmet TV. In today's recipe video we are going to make everyone's favourite, and that's ice cream. And the best ice cream you are ever going to have is the stuff that you make at home, and it's really, really simple. At it's most basic, it's just five ingredients, there's no cooking, all you have to do is whisk and stir.

So we are going to start out. Cup-and-a-half of milk, this is 2%. We have got two eggs, and we are going to use one teaspoon of vanilla extract. Make sure you use pure vanilla extract, not the artificial stuff, really does make a difference in flavour. Three quarters of a cup of sugar.

So what we are going to do is we are just going to whisk this up. Just want to whisk the egg and the sugar and everything altogether. Get it really well mixed and incorporated. You can do this in a blender if you want it. I think a whisk works just fine.

Now, we are going to add two cups of whipping cream. I really like whipping cream, because it adds an incredible mouth feel, and that's really what ice cream is all about to me, so we are going to add that in.

Now, if you are concerned about using whipping cream, you could use light cream. If you didn't think that there was enough fat whipping cream, you could use heavy cream, but just make sure that your total volume of liquid is the same. So just whisk that in, that's it. It's all ready to go into the machine.

So we are going to use this Donvier Ice Cream Maker. It's really simple, there's not too many parts, and it's hand powered. So the only thing you really need to do is put the freezer part in the freezer, at least 24 hours ahead of time, and I'll just pull that out now.

Now, you do need to make sure that your freezer is at least -18 Celsius or 0 Fahrenheit. You don't want to touch the edge of this with wet hands, so you need to be very careful, and certainly not with your tongue. Fits in just like that. Take the paddle attachment and you put it in, so now you are just very carefully going to pour this into the machine. That's great. Just kind of clear all this out of the way.

Take the lid, spin it on. Take your stirring attachment, and that's it. You just want to crank it. Now, you see it's already frozen. That's how quickly it starts to work. Just very carefully, you don't want to force it. If you have to wiggle it back and forth just to get it started, that's what you need to do. Then just turn it three or four times. Let it sit for a minute, and then give it another stir.

So another two or three minutes have gone by and it's time to stir again and again. It's just a little bit hard, so just go back and forth like this, don't force it, and then give it two or three stirs.

Now, you are going to repeat this process for about 15 or 20 minutes, and you are going to know pretty much when it's done.

So about 20 minutes have passed now and we are just about to done. So at this point you could, which I often do, take this apart and eat the ice cream right away. But in this case I don't need this ice cream until later tonight. So using a wooden spoon; and always use a wooden spoon because you don't want to damage the chill fast cylinder. So that's cleaned up.

Now what I am going to do is just scoop this into another container that I can put in the freezer, and the ice cream is going to firm up, and just be absolutely great when it's time to serve.

That's it, into the freezer until it's time to serve.
