Maple Yoghourt Cheese

This isn't a recipe as much as a way to show you a method of creating something great.
A word or two about yoghourt (I'll try not to rant), it really should have only two ingredients - Milk and Bacteria. Any more than that and the manufacturer is hiding something... Now I realise most people like it a little sweet, and with fruit, but make sure that when you cook with yoghourt it's unsweetend, and doesn't contain guar gum, or xantham gum, or gelatine etc; these just get in the way.
Ingredients:
2 cups of plain yoghourt
6 tbsp maple syrup
Method:
Thoroughly mix maple syrup and yoghourt.
Place mixture in cheesecloth 4 layers thick.
Suspend cheesecloth over a bowl - either in a sieve or tied and hanging - for 2-3 days.
Serve.
Variations:
The variations are endless, really endless. This is sweet but you can do savoury, and really all it takes is your imagination + a little trial and error. Even the most calamitous failure will deliver tasty results.

Hi everyone! Welcome back to legourmet.tv. So three days from now, I am going to do a really cool baked apple dessert, and something that I like to have with it is this yogurt cheese, and it's a maple flavoured yogurt cheese, dead simple to make. It just takes a little bit of pre-planning and a little bit of time in the fridge.
So you take about two cups of plain unsweetened, unflavoured yogurt, and this is just a Balkan style yogurt, really nice to work with. So about two cups and then maple syrup, let's say maybe 6 tablespoons, I don't measure, I, just sort of, put it in, you can't have too much maple syrup I think. So about 6 tablespoons and then you just stir it together, get it all well and incorporated, great!
So what I've got here is four layers of cheesecloth over top of a strainer, over top of a bowl. So you just put your cheesecloth, kind of, in the middle of the strainer, and then pour your yogurt mixture into it.
Now, gathered it up and just, sort of, twist it off. Now some people hang it over the bowl. I use the strainer and effectively what you want to do is just keep the cheese out of a liquid that's going to come out of it, that's going to drip into the bowl.
So put that like that and over the course of three days in the fridge, a lot of liquid is going to come out, the cheese is going to become really nice and firm. So I am going to put this in the fridge and we'll come back to it later.
Okay, so this has been in the fridge now for three days and periodically, I just take the liquid that's in the bottom of the bowl, and just pour it out, you don't need it. Just carefully unwrap your cheesecloth, and you have a wonderful lump of maple flavoured yogurt cheese; absolutely wonderful!
Finger licking good. This is great with the fruit tray, it's great with baked apples or poached pears, any fruit combination. Now I've done this as a sweet with maple syrup, you could do exactly the same thing savoury, using your favourite herbs and use it as a vegetable dip or even a chip dip if you wanted to.
