Pear Cobbler Recipe

Ingredients:
7 cups (1.75 L) sliced peeled pears
1/3 cup (75 mL) packed brown sugar
1 tbsp (15 mL) cornstarch
1 tbsp (15 mL) lemon juice
pinch ground nutmeg
Biscuit Topping
1 cup (250 mL) all-purpose flour
1/4 cup (50 mL) granulated sugar
1 tsp (5 mL) baking powder
1/4 tsp (1 mL) baking soda
pinch salt
1/4 cup (50 mL) cold butter
Biscuit Flavouring
1 tsp (5 mL) grated lemon rind
3/4 cup (175 mL) buttermilk
Method:
In large bowl, gently toss pears with brown sugar, cornstarch, lemon juice and nutmeg. Scrape into 8-inch (2 L) square glass baking dish.
Biscuit Topping: In bowl, whisk together flour; sugar; baking powder; baking soda and salt. Using pastry blender or 2 knives, cut in butter until crumbly.
Biscuit Flavouring: In measuring cup, stir lemon rind into buttermilk; drizzle over flour mixture, stirring with fork to form soft, sticky dough. With spoon, drop dough in 9 evenly spaced mounds over fruit.
Bake in 400°F (200°C) oven for about 35 minutes or until bubbly and topping is light golden and no longer doughy underneath when lifted with spoon.

Hi everyone, welcome to Le Gourmet TV. Today in the kitchen we are going to be making a Pear Cobbler. So let's jump right in. First things first, I have some lemon zest here that I have chopped up fairly finely, and I am going to add this into some buttermilk. And just give that a stir and I am going to do this first because I really want that lemon flavour to infuse itself into the buttermilk. Great! So we can just set that aside and forget about it for little while.
So next step, I have already peeled, cored and quartered my pears. These are eight or nine pears, just enough to fill an 8 x 8 glass baking dish and you want it most of the way full. So into this bowl we are going to toss some cornstarch, brown sugar, some lemon juice, and just a pinch of nutmeg, about a 16th of a tablespoon.
Now we are just going to toss this together with our pears and make sure that the pears are completely coated with all of those ingredients and we'll just pore those back into the baking dish. So with the pears taking care of, we'll move on to our biscuit topping. So in this bowl, I have got some sugar, and to that I am going to add flour, baking powder, and baking soda. And just give that a bit of a whisk, just to incorporate it all. Now I am going to use a food processor for this next step. And our flour mixture goes in, and then out of the fridge I have got some butter and I keep the butter in there until the very end to keep it really cold and that goes into the food processor as well. And just pulse it. You just want to break up that butter until it looks like, it looks like, looks like little peas in with the flour. Pretty much the same as you would do to make a pie crust.
Now pour this into a bowl and get rid of the mixer. So to the butter, flour, sugar mixture for our topping, now you want to add the buttermilk with the lemon zest, and you just want to slowly pore this in mix it together. Essentially a biscuit dough. So our dough is ready and now what you'll do is drop the dough mixture on top of the pears. So this goes into a 400 degree oven for about 35 minutes and you just want it golden brown on top, and you want the topping not to be too doughy underneath, just kind of lift it with the spoon to check it.
So here we go. Our pear cobbler is finished and it smells wonderful. The top is brown really nicely, the pears will become soften and infused with the flavour of the brown sugar. Hope you enjoy this. Thanks for stopping by and I'll see you again soon.
